DESCRIPTION
Our version of an Italian New Year's tradition that can be eaten any time of year. This is our most rich and flavorful sausage. We make these by adding Austrian rind-on pork fat and real Hokkaido parmesan cheese to our sausage grind, then spice it with cinnamon, nutmeg, and just a touch of basil, all fresh. Cotechino is traditionally served with lentils on New Year's Eve because it is said that the round shape of the lentils are the same shape as coins and together with the sausage they will bring real money and good luck in the coming year. I can vouch for the truth of this because I've been eating these sausages with lentils every day this week and yesterday I found a 100 yen coin down the back of the sofa.
IN DEPTH
This sausage contains 3 sausages with a total weight of 300g Fresher than our sausages is impossible unless you start stuffing living cows and pigs into casings. Our sausages are processed from the beginning. We take fresh (never frozen) meat, grind it, add natural fresh spices and stuff it into either pork or lamb casings, vacuum pack them and freeze them immediately. Our sausages are not pre-heated or pre-cooked; hence, you need to cook the sausages before eating - but that is very easy and absolutely worth it. Once you go fresh raw meat sausages you will never go back.All the spices we add are 100% natural spices only and most spices are even ground at our processing plant just shortly before we produce our sausages which adds extra freshness. Please make sure to cook these immediately after thawing. The only way to preserve our sausages up to a whole year is by keeping them frozen.

THAWING
Thaw frozen products slowly at low temperatures.
If thawing in ice water, the recommended time-length is about 4 hours per kg.
If thawing in the refrigerator, it takes about 24 hours per kg.
You can thaw it while in the package, but the package may open during thawing, causing leakage, so we recommend double-bagging or thawing on a tray or bowl.
