Product Description

Exquisite fat from acorns and robust umami that overflows with every bite
We deliver natural wild boar meat, raised in the rich nature of Tsushima City, Nagasaki Prefecture, feeding on acorns and abundant natural blessings.

This product is a carefully selected item sourced directly from local "Matagi" (hunters) in Tsushima, who know the mountains of Tsushima inside and out.
For wild game meat (gibier), quick and precise bleeding and processing after capture significantly affect the taste.
Because it is quickly and properly processed with expert skill, there is surprisingly no "gaminess" characteristic of wild boar meat, allowing you to enjoy only the original clear umami and wild, rich aroma.

Characteristics of pork shoulder loin
The shoulder loin is the area from the neck to the back, which is frequently used.
It contains an appropriate amount of the wild boar's characteristic light fat (white meat) between the lean meat, making it a very popular cut for its "rich umami" and "deep flavor," even among wild boar meats.
While having a firm meat texture, the fat melts when cooked, resulting in a juicy finish.

Delivered as convenient "slices" in vacuum-sealed frozen packaging to preserve freshness.
The 200g (approx. 1-2 servings) single-use size is perfect for classic botan nabe (wild boar hotpot), yakiniku (grilled meat), or a slightly more elaborate BBQ.

Serving Suggestions

Simply grilled with salt and pepper
To enjoy the natural flavor of the meat first, quickly grill it in a heated frying pan or on a griddle, and season with salt and coarse black pepper. You'll be surprised by the rich sweetness of the fat.

Classic Botan Nabe (Wild Boar Hotpot)
Simmer with plenty of root vegetables and mushrooms in a broth based on red miso or a mixed miso.
The rich umami and fat from the shoulder loin dissolve into the entire soup, creating an exquisite hotpot that you'll want to drink every last drop of.

Wild Boar Stamina Stir-fry
Instead of pork, stir-fry with cabbage and onions, seasoned with miso or ginger. Because the meat itself has a strong flavor, it stands up well to robust seasoning, making it a powerful, main-dish-worthy item.

More Details

  • Requires thorough heating to the center: As this is natural wild meat, to prevent the risk of parasites and hepatitis E virus, never consume raw, and ensure it is thoroughly cooked to the center (目安 is an internal temperature of 75°C for at least 1 minute).

  • Individual differences: Since natural wild boars raised in the wild are used, there may be slight individual differences in meat quality and fat content depending on the season of capture, age, and gender. Please enjoy it as a flavor unique to nature's bounty.

THAWING

Thaw frozen products slowly at low temperatures.
If thawing in ice water, the recommended time-length is about 4 hours per kg.
If thawing in the refrigerator, it takes about 24 hours per kg.
You can thaw it while in the package, but the package may open during thawing, causing leakage, so we recommend double-bagging or thawing on a tray or bowl.
