Product Description

High-quality fat from an acorn diet, and rich umami in loin meat.

We deliver natural wild boar meat raised on acorns and abundant natural blessings in the rich natural environment of Tsushima City, Nagasaki Prefecture.

This product is a carefully selected gem sourced directly from local Tsushima "matagi" (hunters) who know the mountains of Tsushima inside and out. The taste of wild game meat is greatly influenced by quick and accurate bleeding and processing after capture. Because it is quickly and properly processed with skilled techniques, there is surprisingly none of the "gaminess" characteristic of wild boar meat, allowing you to enjoy only its inherent clear umami and elegant aroma.

Characteristics of Loin Meat

Loin is the finest cut of wild boar meat, with the most beautiful balance between the strong umami of the red meat and the light sweetness of the white meat (fat). The fat has a lower melting point than pork, and a melting sweetness spreads in your mouth.

Delivered in convenient "slices" and vacuum-frozen to lock in freshness. The 150g (approx. 1-2 servings) portion size is perfect for those trying game meat for the first time, or for special meals for a small number of people.

How to Enjoy

Simply grilled with salt and pepper
To enjoy the natural taste of the ingredients, quickly grill in a hot frying pan or on an iron plate, and season with salt and freshly ground black pepper. You'll be surprised by the rich sweetness of the fat.

Classic Botan Nabe (Wild Boar Hot Pot)
Simmer in a sweet and savory dashi broth based on red miso or a blended miso, along with burdock root, green onions, and mushrooms. The more it simmers, the more the wild boar fat melts into the soup, making the vegetables exceptionally delicious. Unlike pork, wild boar loin meat tends to stay tender even after simmering.

Further Details

  • Thorough cooking to the center is required: As this is natural wild meat, to prevent the risk of parasites and hepatitis E virus, never eat it raw; please cook it thoroughly to the center (a guideline is an internal temperature of 75°C for at least 1 minute).

  • Regarding individual differences: Since natural wild boar raised in nature is used, there may be some individual differences in meat quality and fat content depending on the capture time, age, and sex. Please enjoy it as a flavor unique to nature's bounty.

THAWING

Thaw frozen products slowly at low temperatures.
If thawing in ice water, the recommended time-length is about 4 hours per kg.
If thawing in the refrigerator, it takes about 24 hours per kg.
You can thaw it while in the package, but the package may open during thawing, causing leakage, so we recommend double-bagging or thawing on a tray or bowl.
